ALMOND BRICKLE SUGAR COOKIES

2-1/2 cups all purpose flour

1 cup granulated sugar

1 cup butter, softened

1 egg

1 teaspoon baking soda

1 teaspoon vanilla

1 package (6oz.) almond brickle bits

Preheat oven to 350 degrees. Grease cookie sheets. In large mixing bowl, combine flour, sugar, butter, egg, baking soda, and vanilla. Beat on medium speed, scraping bowl often until well mixed. Stir in almond brickle bits.

Shape rounded teaspoonfuls of dough into 1" balls. Place these 2" apart on prepared cookie sheet. Flatten the cookies to ľ" thickness with the bottom of buttered glass dipped in sugar.

Bake in preheated oven for 8-11 minutes until edges are very lightly browned. Remove from cookie sheet immediately. Makes 4 dozen cookies.
