½ cup granulated sugar

½ cup brown sugar

¼ cup shortening

¼ cup butter, softened

½ cup peanut butter

1 lg. Egg

1-1/3 cup flour

1 tsp. vanilla

½ tsp. baking soda

½ tsp. baking powder

¼ tsp. salt

¼ cup chopped dry roasted peanuts

½ cup flaked coconut

¼ cup dried currants

1 cup mini semi sweet chocolate chips

1/3 cup granulated sugar for dipping

1 cup semi sweet chocolate chips for melting

1 tsp. vegetable oil

½ cup dry roasted peanuts, chopped, for dipping

Mix sugars, egg, shortening, butter, vanilla, peanut butter until completely blended.

Stir in flour, salt, baking soda, and baking powder until blended.

Stir in currants, coconut, mini chocolate chips and peanuts. Mix well and refrigerate about 2 hrs. or until firm.

Shape dough in 1-1/4 inch balls, dip into sugar and place 3 inches apart onto ungreased cookie sheet. Press each ball with fork to flatten. Bake in 375 degree oven for 9-10 minutes or until lightly browned. Cool for 5 minutes. Remove from cookie sheet and cool on a wire rack.

Melt remaining 1 cup chocolate chips in small saucepan over very low heat. Add oil and stir well. Dip each cookie ½ way up into chocolate and then into chopped peanuts. Place onto a cookie sheet lined with waxed paper. Remove when set. Makes 2-1/2 dozen cookies! Perfect for your next tea party!!
